À la carte is a menu format in which every dish is listed and priced separately, so guests build their own meal instead of choosing a fixed multi-course menu.

À la carte contrasts with table d'hôte (a fixed-price set menu) and buffet service. It gives guests choice and gives operators higher potential AOV through suggestive selling of starters, sides and desserts.

It also demands tighter inventory and recipe costing, because consumption varies dish by dish rather than following a predictable set-menu pattern.
